Chicken Portobello

 

 

Season chicken and brown both sides in olive oil.

Remove chicken from pan and set aside.

Sauté diced mushrooms, chopped onion, and finely chopped pepperoni (add more oil if necessary).

Deglaze pan with wine and broth while stirring.

Return chicken to pan and cover. Place pan in 350° oven for 30 minutes.

Remove lid and roast for 15-20 more minutes.

Remove chicken from pan and thicken sauce with butter.
